A Family Favorite Served as Cheeseburger Soup
This is a fun family friendly soup recipe that kids enjoy. Its creamy and delicious, kids tend to love it because of the name, and my Hubs specifically requests this soup all the time. It’s simple, fast, inexpensive and I think kind of fun.
To make the soup you add the ingredients that come in a cheeseburger, hold the relish and mustard. Its quick to put together and you thicken it with a cheese sauce just before serving. I love dump in the pot and go recipes, such a great way to feed everyone on a busy day.
Cheeseburger Soup Recipe
1 lb hamburger
1 large onion
4 cups beef broth
2 large fresh tomatoes
1/2 head lettuce
2 tbsp butter
2 tbsp flour
1 cup grated cheddar
2 cups milk
Please try adding the lettuce, its really good. Eons ago I ate stir fried lettuce at university and was shocked at how good it was. My friend laughed as he thought it was funny Canadians ate lettuce raw. Its almost like chinese cabbage in texture but doesn’t have the cabbage flavour of course.
In a large soup pot brown the hamburger.
Dice a large onion, add to hamburger. Continue cooking until the onions are translucent.
Add beef broth, bring to a simmer.
Add 2 large FRESH tomotoes, diced into small chunks.
Half an hour before serving, shred half a head of lettuce and cut into about 1 inch lengths, add to soup.
To make this soup less hearty you can use half the amount of cheese sauce. Of course the cheese is the best part though.
In a medium sized pan over med low heat, melt 2 tbsp of butter, blend in 2 tbsp of flour, add 2 cups of milk. heat and stir until thickened. Depending on the heat this will take about five min.
Add 1 cup of cheddar cheese, cook until just melted and then pour into the soup. Stir to incorporate.
Salt and pepper to taste. Then serve.
Hint: The cheese brand you choose can greatly vary the saltiness of the soup, I never add any salt until the very end.
If you like, you can serve the soup with a toasted bun on top. Baking the soup takes an extra five minutes, but its looks fancy and you can use a hamburger bun for fun.
Ladle soup into individual tureens and cover with half of buttered bun. Place in oven on broil and cook until top is golden.
Take out of oven, let sit a couple of minutes and then serve.
