Easy No Bake Coconut Ball Recipe
This recipe is for coconut balls, I just gave it a fun name to tease the little ones and dared them to eat it. I challenged them to try the snowman farts. My granddaughters giggled when they felt the crunch of the almond center, asking what is this? Of course Grama answered, “What do you think it is?” to a chorus of giggles. The little ones loved these.
This year I am making a few candy recipes, but all of them are super simple to make. This one is no bake and only takes one bowl. How sweet is that?
1 can sweetened condensed milk
2 tbsp icing sugar
whole natural almonds, roasted
Pretty candy cup paper liners
Directions for Coconut Ball Candy
These coconut balls feature a crunchy almond center. The addition of instant milk and icing sugar thickens the recipe so it holds it shape at room temperature,while allowing it to stay silky smooth.
So simple to make a candy recipe that requires no boiling.
Place the condensed milk in a medium sized bowl, add icing sugar and instant milk. Stir to combine. Add the coconut (don’t substitute for sweetened) and mix well.
Using a small cookie scoop, scoop the coconut mixture onto a parchment lined cookie sheet. Place an almond on top.
With greased hands pinch the coconut mixture over the almond. Roll to form a ball.
Place a half cup coconut in a small bowl, roll each ball into the coconut and place in a paper liner.
Chill until firm, about half an hour.
These candies are solid enough to served at room temperature.
Store in fridge for 3 or 4 days or freeze in an air tight container layered with parchment paper for up to 3 months.
These little coconut balls are pretty and for those with allergies, contain no eggs, flour, or chocolate. I am certain your family will love them as much as mine did.
