Instructions
  1. Zest your fresh lemon, add 1 tsp of the lemon zest to a small bowl. 
  2. Squeeze the lemon juice into the bowl.  Set aside.
  3. Heat olive oil in a large skillet over medium high heat. Add garlic, oregano, parsley, chicken stock. Salt and pepper.
  4. Add the 1 tsp of lemon zest with the lemon juice.
  5. Place boneless skinless chicken in slow cooker.  Pour the parsley sauce over top.
  6. Cover and cook on low heat for 6 hours, or high heat for 3 hours.
