Christmas Bark with White Chocolate
An Easy Christmas Recipe for Chocolate Bark
Christmas bark is one of the easiest Christmas treats to make for the holidays. This Christmas bark recipe is a bit different as it uses white chocolate, instead of dark chocolate making it delicious but not quite as rich. This Christmas bark is really pretty to serve as part of a Christmas tray, add to a cookie box, or add to a hot cocoa station. It also travels well if you want to surprise your family in their lunch boxes, or take to a Christmas potluck.
This recipe is no bake, only has three ingredients, and whips up in about 15 minutes. I love it because the cranberries are a tiny bit tart with a sharp flavour that really stands out with white chocolate. Its also very attractive and festive with a crunchy slightly green pistachios.
Cranberry Pistachio Christmas Bark Recipe
Christmas Bark Ingredients`
- 1 cup coarsely chopped dried cranberries
- 1 cup coarsely chopped salted pistachios
- 3 cups white chocolate chips
How to Make Cranberry Pistachio Bark
Step 1 – Preparation
Line a baking sheet with parchment paper.
Shell and chop pistachios. You can buy preshelled pistachios if you prefer.
Coarsely chop the dried cranberries.
Butter a spatula and set aside.
Measure out 1 tbsp of both the cranberries and the pistachios. Set aside.
Step 2 – Melt the White Chocolate Chips
Place the white chocolate chips in a large microwave safe bowl or measuring cup.
Microwave chocolate chips the first time at 1 minute, stir and check if smooth. If still lumpy repeat at 30 second intervals, until the chocolate is melted and smooth when stirred. If you want a better description I have added a video showing what the white chocolate looked like after each 30 second interval. My white chocolate chips took two minutes to become melted and smooth.
Step 3 – Mix the Chocolate Bark
Once melted add in the dried cranberries and pistachios. Fold in to coat the pistachios and cranberries with the white chocolate.
Note: If you’re a little bit short of either the pistachios or the dried cranberries, just add enough of what you have to equal the two cups for the recipe. I had a helper in my baking stash so I was a little bit short of the pistachios. I bet you can relate!
Step 4 – Transfer to Pan
Working quickly before the chocolate cools. Pour the melted chocolate cranberry pistachio mixture onto the prepared baking sheet.
Using the buttered spatula spread the bark into a rectangular about 1/3 inch thick.
Sprinkle the top with the set aside tbsp of cranberries and pistachios. Place the pan in the refrigerator as is. Refrigerate until firm, about half an hour.
Then using a sharp knife cut the bark into pieces.

How to Store Christmas Bark
This pistachio bark will keep for about two weeks in an air-tight container. I like to wrap mine in parchment paper bundles and then store it in an airtight container in the fridge.
If you want to freeze the cranberry pistachio chocolate bark wrap the pieces in plastic wrap then place them in a plastic bag or airtight container. The bark will keep for up to six months.
