Chocolate Fudgy Brownie Recipe
Did you know there are two kinds of chocolate brownies? Your probably thinking who cares, pass me either kind. My brother was a professional baker and disliked fudgy brownies. To his trained eye, a brownie is more like a dense cake, I, on the other hand, think of a brownie as fudge with just enough flour to call it a brownie. So this chocolate fudgy brownie recipe is rich and chewy and just the way I like it. If you love fudge brownies as much as I do this chewy fudge brownie recipe is going to be a favorite.
Fudgy Brownie Recipe Ingredients
Brownie Batter Ingredients
1/3 cup butter
2 oz dark unsweetened chocolate
2 eggs
3/4 cup flour
dash salt
1/2 tsp baking powder
1 cup walnuts
Chocolate Icing Ingredients
1 cup butter
3/4 cup cocoa
3 cups icing sugar
1/2 cup flour (optional)
Preheat the oven to 350 F. Grease an 8 by 8 pan and set aside.
To keep this chocolate fudge brownie recipe as chewy as possible, in a medium saucepan melt butter and solid unsweetened chocolate over low heat.p

After the chocolate has melted, remove from heat and beat in sugar and then the eggs, beating well after each addition.

Mix the flour, salt, and baking powder together, add to the chocolate mixture. Add the walnuts and mix until just blended.
Pour the batter into the 8 by 8 pan, smooth the top and bake at 350 F for about 25 minutes.
As these brownies are fudgy and chewy it is better to under bake them then over bake them. Bake the brownies for 25 minutes. When done they should be firm but spring back up when you push on the top lightly.
Chocolate Buttercream Icing
In the large bowl of a mixer whip the butter until soft and a light yellow.
For each step, I recommend stopping the mixer, adding the dry ingredients, proceed on low speed, once incorporated change to high speed and beat for one minute. This is the best way I know of to keep myself from being covered in cocoa or icing sugar.
Add the cocoa and beat scraping the sides of the bowl down once. Then add half the icing sugar and beat, again scraping down the sides of the bowl.
Taste your icing and decide if its fine as is. If you want to reduce the sweetness, replace a half cup of the icing sugar with flour, otherwise add the rest of the sugar. Beat until smooth and the ice the cooled brownies.
An Optional Extra Topping of Crushed Cookies
We have a charitable tradition in our home, if a child comes to our door we support them, bottle drives, local tickets, coupon books, chocolate covered almond, and oh my Girl Guide Cookies. So these brownies are made with a girl guide cookie topping, but Oreos or Fudgee-o cookies work as well.
To make the topping, use 8 cookies, chop them into large chunks. Spread over the fresh icing and press them into the icing. Chill the brownies until the icing is firm and then cut and serve.f

These brownies are a perfect snack just as they are, or I like to serve them with ice cream as a quick make ahead chocolate dessert. I made this particular batch as I am visiting home soon and squares pack really well.

- 1 cup butter
- ¾ cup cocoa
- 3 cups icing sugar
- ½ cup flour optional
Crunchy Cookie Topping
- 8 Favorite Cookies like Oreo, Fudge-O I used girl guide cookies.
Instructions
Fudgy Brownie Batter
- Preheat your oven to 350F. Grease a 8 by 8 baking pan and set aside. You may use a larger 9 by 9 pan, but of course your brownies will be thinner.
- Melt the butter and the unsweetened chocolate in a medium pan over low heat. Remove from heat, add the sugar and beat well
- Add your eggs one at a time, beating well after each egg. The chocolate mixture will get glossy
- In a small bowl mix together your flour, salt, and baking powder, to distribute the baking powder evenly. Add to the chocolate mixture.
- Add the walnuts and mix until just combined. Quickly pour into your baking pan, and smooth the top.
- Bake for 20- 25 minutes. These brownies are meant to be chewy. It is better to underbake these brownies than to overbake them
- 25 minutes should be all the time they need. When done they should be solid but the top will spring back up when you press on it lightly.
- Let cool thoroughly before adding the icing
Chocolate Buttercream Icing Recipe
- Before adding any dry ingredients stop the mixer, proceed on low speed, once incorporated speed up the mixer. This will significantly reduce the mess from the cocoa and icing sugar
- Stop the mixer and add the cocoa, beat on low speed until incorporated, then beat on high for a minute. Again scrape down the sides of the bowl.
- Stop the mixer and add half the icing sugar. Start it on low until incorporated, then beat on high for a minute. Taste your icing and decide if its fine as is. If you like the icing sweet continue with using the rest of the icing sugar. If you want to cut the sweetness, replace 1/2 cup of the icing sugar with flour. Then beat until smooth and fluffy.
Crunchy Cookie Topping
- Take 8 cookies of your choice. I used chocolate girl guide cookies, Oreos, Fudgee-o would be perfect as well. Simply chop the cookies into large chunks, spread over the fresh icing and press them down to hold.
