No-Bake Strawberry Cream Cheese and Yogurt Dessert
No-Bake Strawberry Cream Cheese Cheesecake Parfait
With winter lasting 5 to 6 months up here, summer is such a blessing. Anytime on the deck basking in sunlight is worth celebrating. Summer is the perfect time to enjoy this No Bake Strawberry Cream Cheese Dessert its cold, features fresh berries and had loads of crunch. Better yet this recipe is both no bake and make ahead. Just pop it in the freezer until ready to serve. A few minutes to thaw and your good to go.
You can make this a boozy dessert if you like, by adding some cupcake vodka to the strawberries. It doesn’t take much vodka, but if you want to skip the vodka its certainly fine to do so. You just cannot miss with fresh berries of any kind, they are always amazing.
This is a no-bake dessert, that should be made a few hours before so it has time to freeze. I made these and took the photos in the morning and the family enjoyed them in the evening. It’s so nice having a no-bake dessert handy in the freezer. You can keep the dessert frozen for longer as long as you wrap it well with plastic wrap before freezing.
Strawberry Cream Cheese Dessert Ingredients
2 cups granola (almond)
2 tbsp butter melted
1 can condensed milk
1 large container greek yogurt
8 oz package cream cheese
3 cups of sliced strawberries
2 oz cupcake vodka (optional)
This recipe makes 6 large layered servings in parfait glasses. They can also be made in smaller plastic cups and frozen as popsicles.
Granola Layer
Mix 2 cups of granola (I used almond, but pick any granola you like) with 2 tbsp melted butter. Stir to coat.

Cream Cheese Layer
In the large bowl of a mixer with the paddle attachment, beat the cream cheese on high until fluffy, scrape down the sides of the bowl.
Add the condensed milk, and again beat on high until fluffy (about two minutes) scraping down the sides of the bowl at least once. Remove from the mixer.
With a spatula gently fold in the yogurt until incorporated.

Strawberry Layer
Wash, cull and slice fresh strawberries. I used a large package ending up with three cups. I think you can add more, but I would not add less. Add 2 oz of cupcake vodka if you like and stir.

Assembling the Strawberry Cream Cheese Dessert
It’ss easier to freeze the strawberry cream cheese parfaits if you have a container to control the individual serving containers. This large muffin tin worked perfectly, I think a cake pan would work as well, but to be honest I didn’t try it.

Place 1/4 cup of granola in the bottom of each glass, top with 1/3 cup of cream cheese mixture, then 1/2 cup of strawberries.
Divide up the remaining cream cheese mixture (about 1/3 cup) and the remaining granola, and garnish each parfait.

I placed a wooden stick as an eating spoon. Sat my glasses inside a large muffin container, wrapped it well with plastic wrap and then tied a plastic bag around it. Freeze it for several hours before serving.u
Serving Strawberry Cheesecake Parfaits
To serve take the strawberry parfaits out about half an hour before serving to give them time soften. .
These parfaits are just so pretty. The little glasses are plastic wine tumblers from the dollar store and I think they present so nicely just as they are.

- Wash, cull and slice fresh strawberries. Add two oz of vodka (optional) and stir to coat.
- Place 1/4 cup of granola in the bottom of each glass, top with 1/3 cup of cream cheese mixture, then 1/2 cup of strawberries.
- Divide up the remaining cream cheese mixtures (about 1/3 cup) and the remaining granola. (about 2 tbsp).
- Place the parfaits in the freezer for at least 8 hours.
