This Christmas saltine toffee is made with just five simple ingredients and no candy thermometer. Crisp saltine crackers are covered with buttery toffee and melted chocolate for an easy homemade Christmas candy.
Preheat the oven to 350°F. Line a large baking sheet with heavy-duty aluminum foil and butter the foil well. Lightly butter a large spoon or spatula for spreading the hot toffee later. Set aside.
Step 2: Prepare the Saltine Cracker Layer
Arrange the saltine crackers in a single layer over the prepared baking sheet. Fold the edges of the foil up around the crackers to help hold them in place. Set aside.
Step 3: Make the Toffee Layer
In a medium saucepan over medium heat, melt the butter. Add the brown sugar and vanilla extract, stirring until well combined. Bring the mixture to a rolling boil.
Once boiling, reduce the heat to medium-low and continue cooking for 5 minutes, stirring frequently. The toffee will begin to thicken, and the bubbles will become larger as it cooks.
Quickly pour the hot toffee over the saltine crackers and spread it evenly with the back of the buttered spoon or spatula.
Once the toffee is spread, place the pan in the oven and bake for about 5 minutes, until the toffee is bubbling across the surface.
Step 4: Add the Chocolate Topping
Remove the pan from the oven and immediately sprinkle the chocolate chips over the hot toffee.
Let stand for 2 to 3 minutes, until the chocolate looks shiny and soft enough to spread. Using a buttered spatula or knife, spread the melted chocolate evenly over the toffee.
Sprinkle your choice of toppings, such as chopped nuts, flaky sea salt, crushed candy canes, or Christmas sprinkles, evenly over the melted chocolate while it is still soft.
Place the pan in the refrigerator, uncovered, until the toffee is completely set, about 1 to 2 hours. Once firm, remove it from the foil and break it into pieces by hand or cut it with a large knife.
Notes
Our kitchen is cold this time of year which can make it harder for the chocolate chips to melt. If this happens, and the chips haven't melted after a couple of minutes. Pop them back into the oven and watch them closely. As soon as they are melted remove from the oven and spread.
