Peel, core, and slice the apples into a large mixing bowl.
In a small bowl, whisk together the sugar, cinnamon, and nutmeg. Sprinkle over the apples and toss until evenly coated.
Transfer the apple mixture to the prepared slow cooker or baking dish.
In a medium bowl, combine the brown sugar, oats, and flour.
Add the cold butter. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles small peas.
Sprinkle the oat topping evenly over the apples.
Slow Cooker Method
Cover and cook on high for approximately 2 hours, or until the apples are tender and the filling is bubbling.
