Chinese Fried Rice with Vegetables

Chinese fried rice is a dish almost everyone loves, its quick to make and is a fantastic side dish as it goes well with an assortment of different main courses.

The most important thing about cooking chicken fried rice is you need to do it with regular rice  (not instant) that has been cooked and left until cold.  Otherwise, the rice turn a bit pasty and glue like.  After the rice is cooked and cooled this recipe take 10 minutes to put together.  Its a delicious side recipe for any kind of pork meal, or Chinese food main dishes, like this Sweet and Sour Pork recipe I served mine with.

Ingredients for Chicken Fried Rice

4 tbsp peanut oil (don’t substitute)

1 tsp sesame oil (its a strong flavour and gives the recipe the authentic taste)

6 cups cooked cold white rice

1 cup leftover sliced cooked chicken

6 fresh mushrooms

1/2 cup frozen peas

2 green onions

4 tbsp dark soya sauce

2 tsp rice wine

1 tbsp sesame seeds (optional)

Heat the oils in a wok or very large frying pan.  The first time you make the recipe add 1 teaspoon of sesame oil.  The flavour of sesame oil is strong and necessary for the authentic restaurant taste.  The next time you make it adjust the amount to suit your family.

Toss in the vegetables and saute for two or three minutes.

Add the sliced chicken.

Drizzle with the soya sauce and rice wine.

Add the white rice, make sure to break it up into individual grains.

Stir fry until the rice is hot and covered in the sauce.  Place in a serving bowl.

Sprinkle the top with sesame seeds.

Munch Chicken Fried Rice while watching Scrooged

Joining in on the 12 days of Christmas blog hop gave us the perfect excuse to do a movie night for Christmas.

Over the Christmas vacation, it will be great to just binge watch two or three Christmas movies and eat the themed food.

My movie pick for the 12 days is Scrooged.  In the movie, Bill Murray’s character remembers when him and his oh so better half Claire first meet and share Chinese food.  You may want to order in chinese food, but making your own saves some much needed cash during the holidays. I also made Sweet and Sour Pork as the main dish.

A easy to make Chinese take out recipe. Make the rice the day before and then you can stir fry your chicken fried rice in minutes.

Ingredients

  • 4 tbsp peanut oil don’t substitute
  • 1 tsp sesame oil
  • 6 cups cold rice not instant
  • 1 cup cooked chicken cut up
  • 6 mushrooms sliced
  • ½ cup frozen peas
  • 2 green onions diced
  • 4 tbsp dark soya sauce
  • 2 tsp rice wine
  • 1 tbsp sesame seeds

Instructions

  • Heat the oils in a wok or very large frying pan.  Add the vegetables and cook for two or three minutes.
  • Add the soya sauce and rice wine.
  • Add the rice,  breaking the rice into individual grains with a spatula.
  • Stir the rice around until hot and covered in the sauce.  Place in a bowl.
  • Sprinkle with sesame seeds (optional)

Notes

I like to make my rice the day ahead and chill in the fridge.   Cold rice works better for this recipe.
