No Bake Easter Cookie Ingredients

The classic chocolate cookie, mixed with crunchy coconut and topped with colorful Easter eggs, makes this no-bake treat disappear fast.

  • 1/2 cup butter
  • 2 full squares unsweetened chocolate
  • 2 cups sugar
  • 1/2 cup canned milk or light cream
  • 1/2 tsp vanilla
  • 2 cups shredded coconut
  • 2 cups oatmeal
  • Hershey Eggies or Cadbury mini eggs

How to Make Bird’s Nest Easter Cookies

Step 1: Prepare the Pan

Line a large baking sheet with parchment paper and set aside.

Step 2: Melt the Chocolate Mixture

In a large saucepan over low heat, melt the butter and unsweetened chocolate.

Add the sugar and cream, increase heat to low-medium, and stir often until smooth. Stir in the vanilla, then remove from heat.

Step 3: Add the Dry Ingredients

Stir in the coconut and oatmeal using a large spoon until everything is well combined.

Step 4: Shape the Nests

Using a cookie scoop for smaller cookies or an ice cream scoop for larger ones, scoop the mixture onto a parchment-lined baking sheet. Use the back of a spoon to gently press a small dent into the center of each cookie to create the nest shape.

Step 5: Add the Candy Eggs

Place the chocolate candy eggs into the center of each nest while the cookies are still warm so they stick.

Step 6: Secure the Eggs (If Needed)


If the candy eggs don’t stick, melt a small amount of chocolate in the microwave. Dip the bottom of each egg into the melted chocolate and press it into the center of the cookie. This works especially well if kids are helping decorate

Storage and Make-Ahead Tips

These Easter cookies are really cute, so instead of putting them in my usual cookie jar, I set them out in a clear glass mason jar on the counter beside the coffee pot. My family spotted them right away and dug in. You know they’re good when you hear, “You’re going to ruin your dinner.”

To freeze these no-bake Easter cookies, let them cool completely and set first. Wrap the cookie sheet tightly with plastic wrap and freeze for a couple of hours, then transfer the cookies to an airtight container with parchment paper between the layers. They freeze well and can be stored for up to six months.
