How to Make Carrot Oatmeal Cookies
Step 1: Prepare the Oven and Pans
Preheat the oven to 350°F. Line two large cookie sheets with parchment paper and set aside.
Step 2: Make the Cookie Dough
In a large mixing bowl or the bowl of a stand mixer, cream the butter until light and fluffy. Gradually add the brown sugar and granulated sugar, mixing well and scraping down the sides of the bowl as needed. Add the eggs one at a time, mixing after each addition, then stir in the vanilla.

In a second bowl, mix together the flour, baking soda, cinnamon, nutmeg, and salt.
