Lemon Bars with Strawberries
All natural lemon squares, with a layer of fresh strawberries, and a pretty glaze topping. An easy to bake from scratch lemon bar recipe.

Bottom Crust

butter

Strawberry Layer

chopped strawberries

minute tapioca
Strawberry Glaze

icing sugar
lemon juice
enough to get thin consistency

strawberry jam

Instructions
Bottom Layer
Preheat the oven to 350 F. Line a 8 inch square pan with parchment paper.
Cream together butter and sugar,
Add the eggs one at a time, beating well after each addition.
Squeeze the juice from the lemon into the egg and butter mixture. Mix well.
In a small bowl mix together the flour, salt and lemon zest.
Mix until blended and spread into the parchment lined square pan.
Add Strawberries
Wash and cut up strawberries into a small bowl.
Add sugar and minute tapioca, mix together until strawberries are coated.
Pour over existing batter.
Bake at 350F fir 30-40 minutes.
Lemon Glaze
Remove lemon squares from oven, and let cool slightly.
Mix together icing sugar and enough lemon juice to make a thin lemon glaze. Add the strawberry jam for colour. Mix well.
Pour the glaze over the lemon squares while still warm.
