Ingredients
Graham Cracker Crust
2cupscrushed graham cracker crumbs
½cupmelted butter
Marshmallow Filling
¾cupmilk
10ozpackage mini marshmallows(400g)
1 tspvanilla
2cupswhipping cream
1cuppowdered icing sugar
Fruit Layer
110 ozsmall can mandarin oranges(284 ml)
113 ozcan crushed pineapple
1 cup shredded coconut
Instructions
Graham Cracker Crust
In a medium bowl add 2 1/2 cups crushed graham cracker crumbs.
Melt 1/2 cup butter in microwave, drizzle over the graham crumbs.
Blend together until well incorporated.
Spoon into the bottom in the bottom of a 9 by 13 inch pan. Spread to cover the entire pan, and press firmly. Place in fridge to chill while preparing the filling.
Pineapple and Marshmallow Layer
Open a can of crushed pineapple and a can of mandarin oranges. Place the pineapple and mandarin oranges in a colander, set aside in the sink until drained. You don't need to keep the juices.
In a medium sauce pan add the milk and 10 oz package of marshmallows.
Cook the milk and marshmallows over medium low heat until it turns into a sauce, stirring often so it doesn't scorch, about five minutes. Add the vanilla, and half a cup of the shredded coconut, stir to combine. Set aside to cool.
While the marshmallow mixture cools, beat the whipping cream until fluffy. Add the 1 cup of powdered icing sugar a little bit at a time.
Spoon about 3/4 s of the whipping cream into the marshmallow mixture. (You don't need to measure approximate is fine). Fold into the marshmallow mixture, until just combined.
Assembling Pineapple Dessert
Retrieve the graham cracker crust from the fridge. Place dollops of the marshmallow mixture on top, spread smoothly with a knife.
Sprinkle the drained mandarin oranges and pineapple over the marshmallow mixture, making sure the fruit is well distributed and there are no empty parts.
Cover with the remaining whipping cream and then the remaining coconut.
