Yogurt Parfait Recipe with Strawberry & Banana
Quick and Easy Yogurt Parfait Recipe for a Nutritious Breakfast
This yogurt parfait recipe can be made from scratch or with purchased granola. I suggest trying the homemade granola, it only takes 10 minutes to make and has less sugar. But purchased nut flavoured granola will work as well.
Yogurt Parfait Ingredients
Homemade Granola Ingredients
6 large dates, pitted
3 tbsp almond butter
3 tbsp honey
2 tbsp butter, melted
1 tsp real vanilla extract
1 cup large flake oatmeal
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 cup raw almonds, roughly chopped
2 tablespoons sunflower seeds
or 2 cups of your favorite nut flavoured granola
Parfait Ingredients
2 cups plain Greek yogurt
1 tbsp sugar (optional)
2 large bananas, sliced
1 c. fresh strawberries, sliced
How to Make Homemade Granola
Preheat oven to 350F. Line an 8 x 8-inch baking pan with parchment paper, leaving a bit of overlap on the sides.
In a food processor or high powered blended combine combine the pitted dates, almond butter, honey, butter, and vanilla extract. Blend until the mixture is smooth and creamy.
Transfer the date mixture to a large bowl. The add the oats, cinnamon, salt, almonds, and sunflower seeds. Mix until well combined and the oats and nuts are well coated.
The best part of granola is the big clusters of oats and nuts, that give it lots of crunch. To get those clusters place the granola mixture on to the parchment lined baking dish and pat down into a circle shape about an inch thick.
Place the granola in the preheated oven for 10 minutes. Remove from the oven, and using a fork break the granola into large clusters. Return to the granola to the oven and bake until its golden brown. About 10 more minutes.
Once baked remove from the oven, set aside and let cool. Granola continues to crispen while it cools, so allow the granola to cool at least 15 minutes before making the parfaits.
How to Store Homemade Granola
You can make the granola up to a week ahead of time. After the granola has cooled place it in an airtight container at room temperature for up to a week.
To Serve Yogurt Parfaits with Strawberry and Banana
I think using plain Greek yogurt works well just as it is in this yogurt parfait recipe. The granola and the fresh fruit add enough sweet flavour for my tastes. But depending on your families taste preferences you may wish to add the optional sugar. To do this place the Greek into a small bowl add the sugar and stir well until it dissolves.
In four large parfait dishes or mason jars, layer the granola with alternating layers of Greek yogurt, sliced banana and fresh slice strawberries.
