No Bake Peanut Butter Coconut Cookies
Here is another tried and true old fashioned cookie recipe my family loves. These No Bake Peanut Butter Coconut Cookies are really fudgy with load of peanut butter flavour and coconut texture. Like most old fashioned recipes it uses simple ingredients you likely have on hand. They are a perfect quick snack on a warm day, kids especially love them, they keep well but often don’t last very long.
No Bake Peanut Butter Cookie Recipe
The thing I love best about old fashioned classic recipes is the ingredients tend to be simple, and easily available. Nothing fancy, just something yummy everyone enjoys. If you like sweets, you should love these no bake cookies.
No Bake Cookie Ingredients
1/4 cup butter
2 cups sugar
1/2 cup canned milk (or cream)
1 cup peanut butter
1 tsp vanilla
2 cups quick oats
1 cup unsweetened coconut
Line a cookie sheet with parchment paper, and set aside.
Measure the oatmeal and coconut and place in a bowl, set aside.
In a large saucepan over medium heat. Melt the butter, then add the canned milk and white sugar. Stir constantly to completely dissolve the sugar. Cook until the mixture starts to boil, then continue to let it boil for ONE minute.
Remove from heat and add the peanut butter and vanilla. Stir until the peanut butter melts.
Add the oatmeal and the unsweetened coconut.
Using a cookie scoop or a tablespoon, scoop the dough out onto the parchment paper.
Place in fridge and let cool for 20 minutes.

These no bake cookies are so rich and delicious they tend to disappear right away. These cookies store very well in an seal container for two to three weeks. I often make them at Christmas time and toss them in the freezer without telling anyone.
Freezing No Bake Cookies
To freeze the cookie place them in the fridge until very solid, about an hour. As they are so fudgy I like to wrap them in two bundles using parchment paper. Once wrapped place in a sealed freezer container or ziploc plastic bag. They can be frozen for up to 3 months. They can also be eaten frozen out of the freezer, and have a way of disappearing that way.
