- 1 package 16 oz Nutter Butter cookies
- 1 (8 oz) package cream cheese
- 1/4 cup smooth peanut butter
- 1/2 cup icing sugar (confectioners’ sugar)
- 1/4 tsp sea salt (or regular salt)
- 1 1/2 cups Belgian chocolate wafers
- Optional toppings: chopped peanuts, sprinkles, flaky sea salt

How to Make Nutter Butter Truffles
You can make these Nutter Butter Peanut Butter Balls in either a food processor or a stand mixer. A food process makes the cookie crumbs extra fine, but if you don’t have one, crush the cookies in a bag with a rolling pin and then mix everything together with a hand or stand mixer.
Step 1 – Prepare the Pan and Tools
Line a large cookie sheet with parchment paper and set aside. If you’re using a food processor, get it out and use the large blade now so it’s ready to go.
Step 2 – Crush the Nutter Butter Cookies
Add the Nutter Butter cookies to a food processor and pulse into fine crumbs. Because the cookies are cream-filled, the crumbs will start to look almost paste like as they break down. Stop and scrape down the bowl a few times. I needed to stir mine three or four times before I was able to crush every last bit of cookie evenly.

Step 3 – Mix the Nutter Butter Filling
Place an 8-oz package of softened cream cheese into the food processor and blend until smooth. Add in the icing sugar and peanut butter, then process again until everything is well combined. Step 4 – Roll the Cookie Dough into Balls
Using a medium-sized cookie scoop, portion the filling and roll it between your hands to form smooth balls. Place each one onto the parchment-lined cookie sheet, leaving a little space between them..


Step 5- Coat the Peanut Butter Balls in Chocolate
Place the Belgian chocolate wafers into a microwave-safe bowl. Heat in 30-second intervals, stirring after each one, until the chocolate is melted, glossy, and smooth. Mine took about 90 seconds total, but the time can vary depending on the microwave.
Tip: Let the chocolate cool for 1-2 minutes before dipping. If it’s too hot, it can melt the filling or cause the coating to slide off. Slightly cooled chocolate clings better and gives a smoother finish.
Drop a peanut butter ball into the melted chocolate and spoon the chocolate over to coat. Lift it out with a fork, letting the excess drip back into the bowl, and place it on the parchment-lined sheet. Repeat with the rest of the peanut butter balls.

While the chocolate is still soft, add your toppings, sprinkles, chopped peanuts or a pinch of sea salt. Adding them while the coating is still warm helps the topping stick firmly in place.

Place in the fridge until set, about 20 to 30 minutes.

Because these truffles are made with cream cheese, I like to keep them in the fridge until about 30 minutes before serving.
- To Store: Place the peanut butter balls in a single layer in an airtight container. They’ll keep well in the fridge for up to 2 weeks.
- To Freeze: Arrange the balls in a single layer on a parchment-lined tray and freeze until firm (about 30 minutes to an hour). Don’t leave them overnight, or they can dry out. Once firm, bundle them in parchment, place in a sealed freezer bag or airtight container, and freeze for up to 3 months. Thaw in the fridge before serving.
