No Bake Cookies with Peanut Butter and Coconut
Lately I have been sharing several of my tried and true recipes, that I raised my boys baking. I love my old fashioned recipes because I know they are good and they use simple ingredients we usually have on hand. These no bake peanut butter cookies are sweet like fudge. You cook them on top of the stove and they set up in a few minutes, which make them great for a quick treat. These cookies whip up very fast and are so seriously easy to make.
No Bake Peanut Butter Cookie R3ecipe
The thing I love best about old fashioned classic recipes is the ingredients tend to be simple, and easily available. Nothing fancy, just something yummy everyone enjoys. If you like sweets, you should love these no bake cookies.
Ingredients
1/4 cup butter
2 cups sugar
1/2 cup canned milk (or cream)
1 cup peanut butter
1 tbsp vanilla
2 cups quick oats
1 cup unsweetened coconut
Line a cookie sheet with parchment paper, and set aside. The last stage of this recipe has to be done quickly so I like to measure the quick oats and coconut into a bowl first.
In a large saucepan over medium heat. Melt the butter, and the canned milk and then the sugar. Stirring constantly to dissolve the sugar, cook until the mixture boils. Let the mixture boil for ONE minute.
Remove from heat and add the peanut butter and vanilla. Stir until the peanut butter melts.
Add the oatmeal and the unsweetened coconut. Work quickly as the cookie mixture cools very fast.
Using a cookie scoop or a tablespoon, scoop the dough out onto the parchment paper. Place in fridge and let cool for 20 minutes.

They look sooo yummy! I can picture them dipped in chocolate too. Mmm.
They would be amazing with dark bitter chocolate to cut down on the sweetness. I will try it, thanks for the idea.
