Lemon Bars with Strawberries
These lemon bars are very moist, with lots of bright lemon and strawberry flavor. They make such a pretty dessert, especially with the shiny glaze on top.
We have an elderly family member I can only see in the summer. I always pack him a variety of dessert bars and squares because they travel well. These strawberry lemon bars are one of his favorite bar recipes.

Strawberry Lemon Bar Ingredients
Bottom Lemon Layer
- 1/2 cup butter
- 3/4 cup sugar
- 2 eggs
- Fresh lemon (zest and juice)
- 3/4 cup all-purpose flour
- 1/4 tsp salt
Strawberry Layer
- 2 cups strawberries, chopped
- 1/4 cup sugar
- 2 teaspoons minute tapioca
Strawberry Glaze
- 1 cup icing sugar
- Lemon juice to thin to consistency.
- 1 tsp strawberry jam.
Directions for Making Lemon Bars with Strawberries
Step 1: Prepare the Pan and Batter Base
Preheat the oven to 350°F. Line an 8-inch square pan with parchment paper.
In a large bowl, cream together the butter and sugar until soft and well blended. You can use a mixer if you prefer, but these bars are so easy to put together that I usually hand mix them.

Step 2: Add the Eggs and Lemon
Add the eggs one at a time, beating well after each addition.

Step 3: Mix the Dry Ingredients and Fill the Pan
Remove the zest from one lemon and set aside.
In a small bowl, mix together the flour, salt, and lemon zest. Slowly add the dry ingredients to the egg mixture and mix until blended.
Spread the batter evenly into the prepared parchment lined square pan.

Step 4: Prepare the Strawberry Layer
Wash and cut up the strawberries. Add the sugar and minute tapioca, and stir until the strawberries are evenly coated.
Step 5: Bake the Bars
Bake in a 350°F oven for 30 to 40 minutes, or until the center is set.

Pour the strawberry mixture over the top of the batter.
Bake in a 350°F oven for 30-40 minutes.
Remove from oven, and let cool slightly.
Step 6: Add the Lemon Strawberry Glaze
Mix the icing sugar with enough lemon juice to make the glaze thin. Add the strawberry jam for color and mix well.
Pour the glaze over the lemon strawberry bars.

Step 7: Serve or Freeze the Bars
You can serve the bars warm or cold.
Lemon bars freeze well. Once the bars and glaze have cooled completely, cut into bars. Wrap the bars in parchment paper and place them in a large freezer container in a single layer. Seal well with plastic. They will keep for up to three months.
To thaw the bars, place them in the fridge overnight before eating.
