Maple Walnut Ice Cream Cake Recipe

Maple walnut ice cream is a much loved classic ice cream flavour. So why not ditch the chocolate and try this yummy Maple Walnut Ice Cream Cake. Its almost no bake, whips up in 20 minutes, and everyone will love how many walnuts their ice cream has. A great summer dessert thats a bit different. Or an amazing way to celebrate a long still warm early Fall day. a

Like the majority of Canadians, my family loves all things maple.    Maple syrup, maple butter, boiled maple on snow, and of course maple walnut ice cream. Maple and nut flavours are such a delicious combination and with the ice cream is a perfect dessert for the end of summer.

This ice cream cake is decadent and delicious.  It easily serves 8 people and I promise they will love it.

Maple Walnut Ice Cream Cake Recipe

Ingredients

Bottom Layer – Ginger Cookie Crust

2 cups ginger cookie crumbs
4 tbsp butter (melted)
1/2 tsp cinnamon
3 tbsp sugar

Filling Layer – Ice Cream

2 litres of good quality maple walnut ice cream I used Breyers but Chapmans is also great ice cream.

Topping – Maple Coated Walnuts

1/2 cup real maple syrup
1 cup  walnuts
1 tsp of butter

Tbsp Maple Syrup (Optional)

Maple Walnut Ice Box Cake Instructions

Cookie Crumb Crust

Place all ingredients in a bowl and mix together. Take 1/4 cup of the crumbs and set aside. Place the rest of the cookie crumbs into an 8-inch buttered springform pan. Press the crumbs into the bottom of the pan.  

Bake at 325 for about 5 minutes. Let cool while you make the maple coated walnuts.

Topping – Maple Coated Walnuts

These maple coated walnuts will certainly provide enough walnut crunch for your ice cream cake. No one will complain there aren’t enough delicious crunchy walnuts or maple flavouring in your cake.

Melt the butter on the bottom of a nonstick frying pan. Add walnuts and pour the maple syrup over top. Cook the walnuts over medium heat, stirring often. Once the maple syrup has evaporated and the walnuts are coated place on parchment paper and let cool.

Maple Walnut Ice Cream Filling

You will need Beyers all natural maple walnut ice cream or another good brand like Chapman’s ice cream. Our container was 1.66 litre size which is close to 2 quarts.

Place the whole container of ice cream into the bowl of an electric mixer.  Add 1/3 of the candied walnuts and beat until it’s semi-soft.

Spoon the softened ice cream onto the cooled ginger crust. Smooth the top.

Candied Walnut Topping

To finish the cake, sprinkle the top with the 1/4 cup of ginger crumbs.

Please the remaining walnuts on top in a pretty pattern.

If you like extra sweetness you can drizzle a tbsp of maple syrup over top.

Wrap tightly in plastic wrap.

Freeze until solid (At least 2 hours) and serve.a

Serving Ice Cream Cake

Any flavour of ice cream cake has to be stored in the freezer. They last for up to a week in the freezer just make sure to wrap them really well.

Depending how cold your freeze is, your ice cream cake can be a little bit hard when you first remove them from the freezer. Allow your cake to thaw for 10 to 20 minutes watching closely and enjoy.

Ingredients

  • 2 cups ginger cookie crumbs

  • ½ cup real maple syrup
  • 1 cup walnuts
  • 1 tsp butter

  • 1.66 L Walnut Ice Cream I used Beyers all natural the container was 1.66 L

Instructions

  • Place the remaining cookie crust crumb into a 8 inch buttered spring form pan. Press the crumbs into the bottom of the pan.

Maple Coated Walnuts

  • Melt the butter on the bottom of a non stick frying pan.
  • Add walnuts and pour the maple syrup over top. Cook the walnuts over medium heat, stirring often.
  • Once the maple syrup has evaporated and the walnuts are coated place on parchment paper and let cool.

Maple Walnut Ice Cream Filling

  • Place the entire container of maple walnut ice cream into the bowl of an electric mixer. Add 1/3 of the candied walnuts and beat until its semi soft.
  • Place the ice cream on top of the crust and smooth the top.

  • Place the walnuts on top in a pretty pattern.
  • Sprinkle the top with 1/4 cup of ginger crumbs
