Well its the middle of December of 2020 and I am still needing to make accommodations for politics in Canada. After doing all the preparations we have been banned from gathering in our homes over Christmas. I am so sad, but pouting will not solve one thing. We already had all the food purchased for the family, so we have decided to make something together each day and then lay back and snack for dinner each evening. Its nothing but appetizers and desserts in our house for awhile. We are starting with a Seven Layered Bean Dip Recipe.
This layered bean dip can be made large or small, as its just the two of us this year I am posting the small version. For a large group just double the recipe, this version makes enough dip for 8 people.

Bean Dip Recipe Ingredients
1 can refried beans
1 package taco seasoning mix
2 cups sour cream
1 jar salsa (16 oz)
1/2 small head iceberg lettuce shredded
1 cup finely shredded cheddar
1 small tomato chopped fine
2 green onions chopped fine
1/2 yellow pepper chopped fine
1/4 cup sliced olives
Tortilla chips
Optional -Jalapenos and Red Hot Sauce
Start by choosing any large platter you like. I have a very large round chip bowl that is so handy, but instead of using the dip insert I added the first three layers in 1/3 of the bowl so I could place the taco chips around it.

First Layer Refried Beans
Place the refried beans in a bowl, add the taco seasoning and mix very well. Place in microwave heat for 2 minutes. Remove from microwave and spread on serving tray.
To add more heat, add more cayenne, and red hot sauce to taste.
Second Layer Sour Cream
Using a tablespoon add dollops of sour cream on top of the refried beans. Spread to smooth.
Third Layer Salsa
Add the salsa on top of the sour cream. Of course you can use hot, medium or mild salsa to adapt the amount of heat in your dip.
Fourth Layer Cheese
Grate the cheese finely, add it on top of the salsa, making sure it stays within the boundaries of the other layers.

Wash and dry all the vegetables, lettuce, tomato, green peppers and green onions.
Fifth Layer Lettuce
Shred the lettuce finely, place as another layer.
Sixth Layer Vegetables
You can add peppers, small bits of avocado, and fresh diced tomatos. Whatever you like or have in the fridge.
Seventh Layer Olives
For the top layer add slices of olives for a mildly spiced bean dip. If you like a hotter bean dip add slices of jalapenos. , then shred the lettuce, add as a layer, then sprinkle with the peppers, green onions and finally options.

You can use this dip right away, or place it in the fridge well wrapped in cellophane (not with the chips) for a few hours.


Now, this is a recipe I can actually Make 😀 and my hubby will love me forever if I give him a bowl of this yumminess to snack on.
